The United States claimed its independence from Britain on July 4, 1776 and Americans began to celebrate democracy and their freedom on that day each year. A Fourth of July party is the perfect way to say, “Happy Birthday, America!” and most Americans take advantage of the opportunity. Cookouts and family get-togethers are a common affair on July 4.

Decorating for a Fourth of July bash can be incredibly simple, since most stores have an overabundance of pre-packaged red, white and blue décor and accessories available. You can also make your own patriotic arts and crafts; or even decorate with flowers or balloons! One of the easiest things to decorate for a July 4 party (or any other celebration) is the table.

Chef Eric Di Domenico, a private French chef for a New York City family, got to have a chat with me about his life and career.

1) How did you get started?

I started working in the restaurant business in my teen years during my summer vacations.

2) Do you have any formal culinary training?

Yes, I went to the culinary school in Avignon, France, for two years.

3) Where does your cooking inspiration come from?

My grandparents were a big part of my desire to become a chef. Both of them were fantastic gourmets.

4) What is your favorite cuisine?

My favorite cuisine is from the Mediterranean coast (France, Spain, Italy, Middle East, North Africa… etc.)

5) What other ethnic food do you like to cook?

Japanese

6) Do you watch any Food network shows on TV?

No, I’m too busy to watch TV in general.

7) Who’s your favorite TV Chef ?

Jacques Pepin

8) Where do you shop and why?

For work Eli’s on the upper-east side is the best. For home Fairway, on 125th Street is the best for my budget.

9) Your favorite restaurant on your day-off?

Tokyo House in Riverdale, the Bronx.

10) What do you cook at home?

My wife is the cook at home. She cooks East African food.

11) What are your hobbies and interests outside work?

I am learning how to play guitar.

12) What is the best piece of advice you could give to a homemaker?

Simplicity.

Napkin Wizard with Chef Eric

Chef Eric Di Domenico agreed to share his Artichoke Comfit recipe with me so I could pass it onto you.



Artichoke Comfit

Ingredients:

4 artichoke hearts (cleaned of all leaves)

4 spring onions

1 bay leaf

1 sprig of thyme

1 clove of garlic

4 pepper corns

1 cinnamon stick

1/2 cup dry white wine

1/2 cup water

1/4 cup olive oil

Combine all the ingredients and bring to a simmer for 12 minutes. Then let the artichokes cool in the liquid.

These artichokes make a tasty snack served in a salad or bruschetta. Or you can add them to other ingredients to make a delicious dish.

Chef Eric made this dish for guest of honor Dr. Henry Kissinger. He added potato gnocchi, tomato sauce, basil oil and balsamic to it.
